  1. 450 g Hake Medallions or Hake fillets
  2. 1 medium onion grated
  3. 1 big tomato grated
  4. 1 tbs tomato paste
  5. 1 sprig curry leaves
  6. 1 tsp red masala
  7. 1 heaped tsp garlic
  8. 1/2 tsp ginger
  9. 1 pinch mustard seeds
  10. 1 pinch fenugreek seeds
  11. 1 pinch cumin seeds
  12. 1 heaped tsp Dhania powder
  13. 1 tsp Jeeru powder
  14. 1 tsp fish spice
  15. 1 tsp turmeric
  16. 1 tsp Paprika
  17. 1-2 whole green chillies
  18. to taste Salt
  19. 3-4 tbs oil
  20. 1 tbs ghee
  21. Garnish with chopped coriander and spring onions

Steps to make to make Masala Fish

  1. Fry onions with curry leaves and whole spices - mustard seeds, fenugreek seeds, cumin seeds, garlic, ginger, whole green chilies - with oil and ghee until golden in colour
  2. Add grated tomato, tomato paste and all the spices - red masala, dhania powder, jeeru powder, fish spice, turmeric, paprika, salt. Mix well
  3. Cook until you get a nice thick Chutney and oil starts to come to the top.
  4. Add the fish to the pot and cook on low heat until the fish is cooked. Turning gently so as not to break the fish
  5. Garnish with chopped greens - coriander and spring onions. Serve with rotis.
