- A. Fish
- 700 g small sardines
- 2 tsp turmeric powder
- 2 tsp chicken seasoning powder or 1 tsp salt
- B. 180 g Salted Black Beans
- C. Sauce - Mixed & Combined
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp sweet soy sauce
- 2 tsp sesame oil
- 1 1/2 C water
- D. Sautéed
- 1/4 C cooking oil
- 1 tbsp FINELY JULLIENED Ginger
- E. Seasonings
- 1 tbsp sugar
- 1/2 tsp - 1 tsp chicken seasoning powder
Steps to make to make Fried Fish in Salted Black Beans
- Recreating one of our favourite childhood canned food, 'Fried Dace with Salted Black Beans'. Use Dace or small fresh Sardine fish. Clean and remove heads.
- A - Rub sardines with turmeric powder and chicken seasoning powder or salt. Heat up cooking oil in a pan and deep fry sardines until both sides turn crispy. Keep aside.
- B - In a colander, rinse preserved salted black beans under running water. Keep aside.
- C - Mix and combine ingredients in C. Put aside.
- Cooking and preparing the dish - In a deep pan, Sauté D until FINELY JULIENNED ginger turn aromatic and light brown. Add B (salted black beans) and then C (sauce mixture). Stir to mix. Season with E and lastly add A (fried sardines). Taste and adjust seasonings accordingly. It shouldnt be too salty or too sweet. Stir and coat fried sardines with the sauce. Then Transfer everything to a slow cooker (or use pressure cooker).
- Using a slow cooker, Cook on high for 2 hours and continue on low for 4 hours. Serve dish with warm rice.
